      “Shanxi ranks the first place in vinegar brewing in history, and Qingxu County ranks the first place in vinegar brewing industry in Shanxi Province”. Qingxu County, as the cradle of Shanxi old mature vinegar, has made great contribution to vinegar brewing in China during evolution of vinegar history for more than 4000 years, and thus Qingxu County is also called “a city of vinegar in China”.      

    “Baoyuan Workshop” was initially built in the 3rd year of Xuande Reign in Ming Dynasty, namely the year of 1428, and it has a history of more than 500 years. Baoyuan old mature vinegar had been used as the tribute to royal in Ming Dynasty and Qing Dynasty and created brilliant achievement for vinegar industry in Shanxi Province. However, with historic advancement, Baoyuan Old Mature Workshop closed its business because of long-term famine and war in middle region of Shanxi Province. 

    To dig the profound history and culture implication of the old mature vinegar, publicize the vinegar culture and make the people to know the history origin and traditional production process of the old mature vinegar, the Company completely restored the original form of the vinegar workshop in Ming Dynasty and Qing Dynasty on the site of Baoyuan Workshop.

    The rebuilt Baoyuan Old Vinegar Workshop takes up the architectural style in Ming and Qing Dynasties, consists of blue bricks, grey tiles and ancient wood carvings, and the production technology of old mature vinegar, utensils tools and clothes for vinegar brewing of the vinegary workshop in Ming and Qing Dynasties are completely restored, it reproduce the vinegar brewing scene in ancient time from raw material for vinegar brewing to finished product step by step
