    The Company has advantaged superiority for producing Shanxi old mature vinegar. Firstly, the Company is located at the origin of Shanxi old mature vinegar—Qingxu County. Water quality around the Company is partial alkaline and is suitable for brewing vinegar; secondly, there are accumulated experiences of vinegar brewing for several thousand years; thirdly, four seasons in Shanxi Province are distinctive, climate and temperature are moderate, and there are optimal fermentation conditions for brewing vinegar and brewing wine; fourthly, high-quality sorghum is produced in the plain in middle of Shanxi Province, and there are also more than 70 miscellaneous cereals in Shanxi Province that is really one kingdom of miscellaneous cereals, and there are incomparable advantages for vinegar brewing. In the industry in Shanxi Province, the Company was the first to provide Shanxi mature vinegar (in 1977), the first to produce old mature vinegar with solid state fermentation technology (in 1978), the first to reutilize the vinegar residue (in 1978), the first to substitute small vat with large vat in acetic acid fermentation technology, the first to replace the stirring unstrained spirits with hands with the stirring unstrained spirits with shovel, and land area was saved, productivity was improved, raw material in each vat increased from 3kg to 15kg, the first to substitute sorghum hull with rice hull as the auxiliary material and the problem of great precipitation and saline taste was resolved, the first to take up micro-computer control technology in old mature vinegar alcoholic fermentation technology,and  the first to submit application to the State for evaluating Shanxi old mature vinegar traditional technology to be the first batch of non-material cultural heritage in China.

        With continuous practice and improvement for more than 30 years, the Company has summarized a complete set of scientific brewing technology. The No.8 Branch Factory of the Company owns the largest production line with the traditional technology of Shanxi old mature vinegar in China, scale operation of the traditional technology ranks the first place in China. Solid state alcoholic fermentation technology of old mature vinegar of the alcoholic fermentation workshop is the innovative result of the Company in 1970, presently it has been extended in application by the Company, Smoked acetic acid of the acetic acid fermentation workshop is the unique technology for Shanxi old mature vinegar and mature vinegar, and it is the only one in the world.    

        Scientific operation of traditional technology of the No.7 Branch Factory of the Company ranks the fist place in China. With intelligent control management, pipeline conveyance and mechanized operation, the unique fermentation technology in this industry in China is formed. It inherits the traditional brewing method of liquid state fermentation of Shanxi old mature vinegar and takes up intelligent control management, pipeline conveyance and mechanized operation, workers do not contact materials in entire fermentation process. It is the scientific innovation result of the Company in 2000. in 2002, it was evaluated to be one technological innovation item in Shanxi Province, and this result is another pioneering work for technology of Shanxi old mature vinegar, and is one historic breakthrough of fermentation industry history.
